14 oz. glass
1 ½ oz. gold rum
¾ oz. ginger extract (see ginger extract recipe)
¾ oz. simple syrup
¾ oz. fresh lime juice
1 ½ oz. black rum
Fresh lime wedge
Simple syrup: 2 parts white sugar to 1 part water in a saucepan, bring to boil, low simmer for 10 minutes
Ginger extract: Cut ¼ lb. fresh ginger into ½” pieces, put in blender with 2 C water, blend well, squeeze through strainer, store in refrigerator.
14 oz. glass, ice, 1 ½ oz. gold rum, ¾ oz. ginger extract (see ginger extract recipe), ¾ oz. simple syrup, ¾ oz. fresh lime juice, add soda water to 1” from top of glass and stir. Now add 1 ½ oz. black rum. Note: add black rum very slowly to make a dark float layer on top. Slip straw in very carefully so as not to break the float. Garnish with fresh lime wedge.
